They change their color to be undetected as in hiding to survive but creation of Eden was suppose to be perfect.

Gopd created to make sure everything will not be perfect? God wanted humans to fall?

Why?

If humans were created to fall then why later on try to make them perfect again to build them a perfect paradise?

Like having nothing else to do or what?

Eden was only in a limited area, it did not fill the Earth, otherwise why was mankind told to "subdue it". There still were predators and prey in the world.

God loved man, He didn't create them to fail. He gave us a free will, which you show that you are using by rejecting Him and His salvation. He didn't want robots who loved Him because they had no choice, He alredy had the angels.

An animal changing color is an example of a variation within the same species, not new species coming into existance through evolution. This change came about through microevolution after the fall of man in the garden.

God's original creation was perfect. Unfortunately, Satan decided that he wanted to be God, and led men to disobey God's commands. God gave us free will because it would have meant nothing to him to have robots that just blindly followed his commands. God was willing to risk man's rebellion when he gave them free will.

Humans were not created to fall. When they did, however, God in his mercy and love provided a way for them to be reconciled to him.

VERY good question. They had to adapt, so it evolved with them over time.
